Bar Food: Chicken Wings and Fried Cauliflower

What are we making in this on-demand cooking class?

In this class, we will be frying up some bar food and making some sauces.

  • Fried chicken wings

  • Cornmeal crusted fried cauliflower

  • Buffalo sauce

  • Lemon pepper beurre blanc

  • Blue cheese dressing

Who is teaching this on-demand cooking class?

This class is taught by my good friend Chef Tom from Denver, Colorado. 

Tom has worked in many restaurants (mostly in Atlanta). He taught three virtual cooking classes back when I was organizing those. This is his first on-demand cooking class. 

How is this on-demand cooking class structured?

You can choose to make everything in one day, or you can make the fried chicken wings and the sauces on one day and the fried cauliflower the next day.

How long will this on-demand cooking class take?

The longest part of this class is roasting the cauliflower. Other than that, we are doing all of the frying and sauce-making in real time. You can easily be done in under an hour if you make everything (not including the aforementioned roasting of the cauliflower).

Is this class good for vegetarians?

Yes, just skip frying the chicken wings! The sauces and dressing are vegetarian. The cauliflower goes with either sauce. And everything goes with blue cheese dressing.

What ingredients and equipment do I need?

Ingredients (exact quantities will be provided once the class has been purchased)

  • Chicken wings

  • Canola oil

  • Kosher salt

  • Carrots

  • Celery

  • Cauliflower

  • Olive oil

  • Buttermilk

  • Cornmeal

  • Black pepper

  • Mayo

  • Blue cheese crumbles

  • Frank’s red hot sauce

  • Butter

  • Garlic powder

  • PBR (or a similar beer)

  • Shallot

  • Garlic

  • Dry white wine

  • Lemon vinegar

  • Lemon

  • Honey

Equipment

  • Dutch oven or a large pot for deep frying

  • Spider for removing the fried food from the oil

  • Candy thermometer for measuring the oil temperature

  • Sheet pan and a wire rack

  • Medium saucepan

  • Small fine mesh strainer
