For our first stop on our February trip around the world, we are heading to Costa Rica. We will be making passionfruit ceviche, patacones, and margaritas. For the ceviche, Chef Steve suggests using fresh tuna or swordfish. Vegetarians, chef would like for you to substitute mango for the fish in the ceviche. Patacones are fried green plantains, and we will be making those in class too. And for a meal like this, you’ve got to round it out with a cocktail. So we will be making Don Julio margaritas!
