Is your grilled cheese and tomato soup game good enough to get you through another winter? I’m not talking about using American cheese (which is great, don’t get me wrong) or soup in a box. I’m talking about soul-hugging, creamy tomato soup (completely vegan, by the way) and a cheddar and smoked gouda grilled cheese with a crispy cheese crust. The cheese crust, well, it’s kind of like a Cheez-It. How you eat it, well, that’s up to you!

Yep, it’s me. I’ve been organizing these classes since January of 2021 and now I am teaching my first class. I’ve been cooking at home for two decades. In the last year, I decided to get out of my comfort zone in the kitchen – literally. I worked at a meat & cheese shop and in the kitchen of a restaurant that was recently named one of 5280’s 25 Best Restaurants in Denver.

Equipment Needed:

    • I’ll be using nonstick

    • I’ll be using a 4 quart dutch oven

    • Sourdough loaf preferred, but you can use your favorite

  • Smoked gouda cheese

  • Medium cheddar cheese

  • Extra sharp white cheddar

  • Butter

  • Red onion

  • Garlic

  • Canned whole peeled tomatoes

  • Dried oregano

  • Extra virgin olive oil
